Article 5 (1) of European Regulation
852/2004 requires that food business operators must implement
a food safety management system based on the principles of HACCP. This
requires businesses to identify what could go wrong at each step of
their food operation and implement effective systems to control and
monitor those hazards that are considered significant.
HACCP (hazard analysis and critical control points)
is an internationally recognised food safety management system,
providing an effective tool for identifying and controlling food safety hazards and
ensuring compliance with UK and European legislation.
